Appetizer
1/2
block of water packed extra firm tofu
1/4 cup olive oil (for cooking and flavor)
1 tablespoons vegetarian chicken-flavored powder (or 1 packet of dried
mushroom soup).
Small wedge of brie or camenbert
1 tablespoon pesto
Olives (as many or as little as you like)
Prepare Tofu
Drain tofu
of all water and press tofu blocks firmly with cheese cloth or paper
towel to remove excess water.
Cut tofu into small thin squares to look like bite size crackers.
Heat olive oil in frying pan and fry tofu till firm and browned (making
a tofu cracker) then drain.
Marinade
In 2 cups boiling water dissolve vegetarian chicken flavored powder
(1 packet of dried mushroom soup). Let sit for 1 hour (3 hours
if using mushroom soup).
To Make
Put tofu crackers on oven tray
Spread each one with pesto
Put a small slice of brie or camenbert on top
Add as much or as little sliced olives as you like
Grill for 1-2 minutes or until brie is begining to melt.
Hot Tip
If left under grill until brie is completely melted you loose falvor
so make sure the brie is still crusted on the edges and only slightly
melted in the middle.
You can experiement
with marinades and toppings for other occaisions using sundried tomatoes,
artichoke hearts, peppers, mushrooms and your favorite cheeses.

Tbl Veg. Oil
1 Med Onion chopped
1 clove garlic crushed
1 Tbl fresh basil chopped (or 1 tsp dry)
2 cups Mushrooms sliced
1/4 cup sundried tomatoes rehydrated in 1/2 cup boiling water for 10
minutes
8 oz. cooked fettuccine
To
make
Heat
oil
Sautee
onions until tender
Add
garlic, basil, salt, mushrooms and tomatoes
Sautee
all ingredients for 2-3 minutes
Boil
fetuccine until aldante
Mix
all ingredients together in sour cream*
Serve garnished
with fresh basil
* for creamier
sauce retain hydrating water and add with sour cream until desired consistency.
